The restaurant chain was created as Pei Wei Asian Diner in 2000 by P. F. Chang's China Bistro (PFCB) to compete in the fast casual restaurant segment with a Pan Asian menu and quick, made-to-order service model, while P. F. Chang's remained in the full-service restaurant segment. [2] The first Pei Wei location opened in Scottsdale in 2000. [3]
In 1985, he opened another in Phoenix. Fleming opened his third location in San Francisco and a fourth in Hawaii. He eventually sold all of the franchises back to Ruth's Chris. Chiang was born in 1948 in Shanghai. [2][3] He spent his childhood in Japan, his parents having fled China in 1949 due to the Communist takeover. [4] His father served as a diplomat for Taiwan. [4] With relatives in California, Chiang's mother, Cecilia Chiang, later moved with him and his sister to San Francisco's Chinatown.
